Big Soft Ginger Cookies
Serves 24

3/4 c. butter, softened
1 c. sugar
1 egg
1/2 c. molasses
2 1/4 c. all-purpose flour
2 t. ground ginger
1 t. baking soda
3/4 t. ground cinnamon
1/2 t. ground cloves
1/4 t. salt
Additional sugar

In a large bowl, cream the butter and sugar until light and fluffy. Beat in egg and molasses.

In a separate bowl, combine the flour, ginger, baking soda, cinnamon, cloves and salt. Gradually add to the creamed mixture and mix well.

Roll dough into 1 1/2 inch balls then roll in the additional sugar. Place 2 inches apart on an ungreased baking sheet. Bake at 350 degrees for 10-12 minutes or until puffy and lightly browned. Remove and cool on wire rack.
