Red Velvet Cupcakes with Cream Cheese Frosting

Valentine’s Day is this Friday! Why not celebrate with your loved ones by baking together? The residents of Vista Prairie’s Goldfinch Estates Senior Living Community shared their favorite Valentine-inspired recipe that you’re guaranteed to fall in love with.

Red Velvet Cupcakes with Cream Cheese Frosting
Serves 12

1 1/2 c. sugar
1/2 c. unsalted butter
2 eggs
2 T. cocoa powder
2 oz. red food coloring
2 1/2 c. all-purpose flour
1 t. salt
1 c. buttermilk
1 t. vanilla
2 oz. water
1 t. vinegar
1 t. baking powder

Line 12 muffin tins with Valentine-themed liners. Pre-heat over to 350 degrees. Cream butter and sugar until light and fluffy. Add eggs one at a time, beating after each addition. Make a paste with the cocoa and food coloring; add to butter mixture; blend well. Stifle flour and salt together; add to mixture and mix. One at a time, add the following, mixing after each addition: buttermilk, vanilla, and water. Combine vinegar and baking soda and fold into the cake batter; DO NOT BEAT. Divide between the 12 lined muffin cups.

Bake at 350 degrees for 15-20 minutes or until cake springs when touched. When cupcakes are completely cooled, frost with cream cheese frosting. Garnish with chocolate curls and fresh raspberries. Enjoy!
