At Vista Prairie Communities, our chefs love cooking and baking with seasonal fruits to add variety to dishes, especially desserts! A chef favorite is pears, when the fruit turns a more golden color and the flesh near the stem is soft under light pressure. Test out this Fresh Pear Cake recipe while the fruit is still in season!
Fresh Pear Cake
Makes 1 bundt cake
4 C. peeled, cored and chopped pears
2 C. white sugar
3 C. sifted all-purpose flour
1 t. salt
1 1/2 t. baking soda
1 t. ground nutmeg
1 t. ground cinnamon
1/2 t. ground cloves
4 egg whites
2/3 C. canola oil
1 C. chopped pecans
Combine the pears and the sugar and let stand for 1 hour.
Preheat the oven to 325 degrees. Spray a 10-inch bundt pan with non-stick cooking spray.
Slightly beat the egg whites and combine them with the oil, chopped pecans and pear mixture. In a separate bowl, mix the flour, salt, baking soda, nutmeg, cinnamon and cloves. Stir in the pear mixture. Pour batter into the prepared bundt pan.
Bake for 70 minutes. Remove from oven and let cool on a wire rack for 10 minutes before removing the cake from the pan. Enjoy!
